Here is one of our delicious new Buddha Bowls
Serves: 4 Portions
You will need:
40g Baby Red Chard – washed & drained
120g Red Quinoa
120g White Quinoa
120g Black Quinoa
120g Button Mushrooms – washed & sliced
15ml Lemon Juice
½ tsp Five Spice
160g Chickpeas – drained & rinsed
60g Radishes – finely sliced
120g Watermelon – peeled & cut into 2cm Dice
120g Broccoli Florets
20g Mint – leaves picked and roughly chopped
40g Pomegranate Seeds
40g Pecan Nuts – roughly chopped
1 tsp Nigella Seeds (Black Onion Seeds)
Method:
Mix the mushrooms with the lemon juice and Five Spice and leave to stand for 30 minutes. Drain the mushrooms
Blanch the broccoli florets in a large pan of boiling water, chill down rapidly and break into smaller florets.
Place the white & black quinoa’s, mushrooms, watermelon, chickpeas, mushrooms & broccoli in small piles around a suitable serving bowl
Place the red chard in the middle and then sprinkle over the pomegranate seeds, pecan nuts, nigella seeds and chopped mint
